Apple Jack Protein Brownies

I can't tell you how long it's been since eating any commercial cereal, but I can tell you that I ate a crap ton of it right up to about age 15 before switching to eggs.

These brownies don't contain any cereal, nor do they contain the sugar or the "healthy grains" you'd find in a box of Kellogg's Apple Jack's, but if you're like me, the flavor will remind you of that cereal.

Now days those requirements are negotiable and lifestyle-dependent. Low carbers drop the starch, vegetarians drop the meat, and most bachelors will skip the vegetables.

What To Do With Leftover Fish

In the 70's, Hamburger Helper and Tuna Helper became popular mom-friendly dinners. And decade after decade, the semi-pre-made-dinner-trend didn't die. As a kid of the 90's I remember making plenty of these things.

They were a line of boxed meals from Betty Crocker made mostly of pastas, sauces, and spice mixes. All you had to do was add meat, margarine, and milk, then heat it up on the stove.

Dinner Plans: Cuban Picadillo

There are three reasons for you to make Cuban Picadillo:

1. It’s a one-pot meal. I hate to call this “cooking” because it’s more like assembling. You just assemble a bunch of stuff into one pot, let it simmer, and finito.

2. It’s healthy comfort food: hearty, warming, filling, yet nutrient-packed... it also happens to be gluten free and dairy free in case you’re going easy on either.

3. Its spice combo is unlike any run-of-the mill American flavors.

Gluten Free Mexican Pizza

Is it pick-up-able?

This is the question my husband and I ask when trying out gluten free or paleo pizza crusts. We've experienced one too many that had to be eaten with a fork because of the sogginess. 

We've also noticed that a lot of the paleo pizza crusts are made with cauliflower and tons of cheese. This crust contains neither, and the slices are pick-up-able.

Quinoa Pizza Crust

I'm late jumping on the quinoa bandwagon. I thought it'd be a hassle to cook, but it wasn't. The quinoa I used (Ancient Harvest) was pre-rinsed and it cooked quickly in a rice cooker. 

When it comes to carb sources, quinoa is a superstar because of its other nutrients like magnesium and potassium. It's also high in protein and a lot of people love it because it's a seed not a grain.

Avocado Egg Salad

Mayo is pretty gross. The oil in it is not the kind you want to put in your body. And if you take a look at the label of a low fat or fat free version, you'll see what a lot of people call a chemical sh*t storm.

Luckily, mother nature makes a fatty fruit that's perfect as a stand in: the avocado.

Mash it up with salt, pepper and any other spices, and you'll find that it's even better than mayo. Plus it's full of fiber, phytochemicals, and other great nutrients that mayo lacks.

Gluten Free Waffles: What you Need to Know

Who says waffles have to be cake-like and covered in syrup? Who says they have to be topped with whipped cream, fruit preserves, or other hyper-sweetened junk?

There’s a food truck in Denver called Wafflegänger, and their menu blew my mind the first time I saw it.

Flatbread Tuna Melt: Mayo-Free and Gluten-Free

This flatbread doubles as a pizza crust, so copy and paste the recipe somewhere because it’s the closest I’ve ever gotten to the perfect gluten-free crust.
